Happy Mother's Day and a Chocolate Dipped Strawberry Smoothie

Happy Mother's Day!

Chocolate Dipped Strawberry Smoothie
My boys surprised me with some pretty pink roses for Mother's Day Weekend.  I love the color.  Wouldn't it be nice to always have fresh flowers around your home?

Early in the day on Saturday, we all went the gym. I have been going for lots of walks lately so the 45 minutes on the eliptical machine was a tolerable change of pace.  Afterwards, I was looking for a healthy snack so I decided to make a strawberry smoothie.  (Strawberries were on sale this week so I am adding them to everything for fear they will go bad before I can use them up!)  I was afraid my smoothie would be too thick so I considered adding milk but it occured to me that chocolate and strawberries go together (chocolate dipped strawberries).   I added some lite Chocolate Silk (soy milk) in the place of milk.  The tartness of the vanilla Greek yogurt and the huge amount of strawberries in the smoothie overshadowed the chocolate flavor but I was pretty happy with my smoothie today.  This smoothie was not as thick as some of the other smoothies I've been making (likely because there was no frozen banana in this one).

Chocolate Dipped Strawberry Smoothie

1 container vanilla Oikos Greek yogurt (5 ounce size)
1 cup fresh chopped strawberries
1/3 cup Lite Chocolate Silk (soy milk)
3 to 4 ice cubes if  desired

Place all ingredients in a blender and puree until blended.  Pour into a glass, slurp with a straw, and enjoy!
