Beat the Heat: Balsamic Tomato Salad


Another tasty and fresh recipe to help you Beat the Heat!

It's very hot here in Southern Colorado; many days have been in the high 90's!  Today we went to Sam's Club and I found these gorgeous, colorful tomatoes and this pretty bottle of extra virgin olive oil.


I am sure I would have enjoyed eating these tomatoes by themselves or with a little cottage cheese, but I decided to get fancy.


This is hardly a recipe but this is what I came up with.

Balsamic Tomato Salad (Serves 1)

1 cup chopped tomatoes
a pinch of salt
a pinch of freshly ground black pepper
a pinch of dried Italian Seasoning
a splash (about 1/2 teaspoon of balsamic vinegar)
a dribble (about 1/4 teaspoon of extra virgin olive oil)

Place all ingredients in a plastic container with a lid; with lid on, shake container to coat the tomatoes with the other ingredients.  If desired, serve over a bed of spinach with a side of cottage cheese.
