White Bean Avocado Mash (Vegan)
I was feeling a bit inspired the other day. I came up with this recipe and I enjoyed it in a variety of ways.
WHITE BEAN AND AVOCADO MASH
1 can (15.5 ounce) cannellini beans, rinsed and drained
1 ripe avocado
zest of 1/2 a lime
3/4 teaspoon salt
About 2 tablespoons of fresh, chopped cilantro
1 to 2 tablespoons of water
A few pinches of cruised red pepper flakes or a little hot sauce (optional)
Combine all ingredients in a food processor and pulse until smooth and creamy and well combined. It may be necessary to add in a tablespoon or two of water to help the ingredients blend well in the food processor. You can enjoy this recipe in a variety of ways as you see in the photos here.
BELOW: Stuffed in a baked potato and topped with chopped cherry tomatoes
ABOVE: In a wrap or tortilla along with fresh veggies and seeds/nuts (cucumber, cherry tomatoes, hemp seeds, and toasted pumpkin seeds).
