W.I.A.Y. (What I Ate Yesterday)
Do you ever get in one of those modes where you try to buy as little as possible at the grocery store and you go on a mission too use up whatever odds and ends you have at home to make up meals? That's my mode this week.
Breakfast (above): Slower Cooker Banana Nut Steel Cut Oats (recipe link HERE) topped off with walnuts, raisins, and almond milk. This recipe makes many servings so I freeze individual portions and thaw a few at a time... as I need them.
Above... post-dog-walking snack: Little Cuties. Remember... you are what you eat... so I am a little cutie! Ha, ha!
Lunch (above)... a yummy kale salad with some diced up deli turkey meat. I found this salad at WalMart. I did go to the store for just a few fresh items yesterday. You can see the salad packaging below. I usually throw out the crunchy salad toppings such as croutons. This one had some bread crumbs which I did throw out, but there was also a small package with some dried cranberries, pumpkin seeds, and something called "crisp quinoa". This was a great salad. I did use the dressing from this salad package; it was very good. I got three meals from one bag of salad. Love that! I'd love to see if I could figure out how to make "crisp quinoa"; it was good. And I just love seeds and dried cranberries on a kale salad, too.
I had a banana as a snack...
And then I had 1/2 of an apple with peanut butter...
It was good, so late in the afternoon... I had the other 1/2 of the apple with more peanut butter. I think I KNOW I like peanut butter a little WAY TOO much!
Dinner below was more of that yummy kale salad, but no deli meat. I ran out of deli meat.
And before bed, I had some popcorn and some red wine. What a treat! I've been making popcorn in plain brown paper bags (lunch bag). It works out really well. I'll post about that soon.
So this is what I ate yesterday. I'll have to see how many more days I can go before grocery shopping again. Today I made up the craziest pot of soup in the crock pot and I used up so many odds and ends. Crushed tomatoes, canned pumpkin, beef broth, 1/2 a packet of taco seasoning, a pound of Jennie-O Taco Seasoned ground turkey, chopped bell pepper, jalapeno pepper, and onion from the refrigerator... and even frozen peas and carrots out of the freezer. I was a bit worried about this soup but it actually turned out to be really tasty.
