Pumpkin Pies... I always use the recipe on the Libby's can and I always make two pies at a time.

It is definitely pumpkin season and I love it!

I have tried a lot of new recipes in the last several weeks and, of course, have made some family favorites

Pumpkin pie
Pumpkin bread
Pumpkin pancakes 
Pumpkin granola
Pumpkin roll
Pumpkin chocolate chip cookies

The Pumpkin Chocolate Chip Cookies above were a fun treat; they are moist and cakey which is very different from most cookies I make. I really liked them and the pumpkin flavor is actually very mild. The Pumpkin Chocolate Chip Cookies call for special double acting baking powder. I just used regular baking powder and they turned out just fine. Somehow I felt like these were a bit healthier than some cookies since they used pumpkin, vegetable oil, and I used white whole wheat flour. The Pumpkin Pancakes pictured above called for Bisquick and they are a great use for that little bit of left over pumpkin puree when you have a recipe which does not call for an entire can of pumpkin. The recipe link is HERE.
