Grilled Chicken Fajita Kebabs

We tried a new recipe this past Sunday and it was great. We will definitely make this recipe again.  My husband is not a big fan of chicken but he really likes this meal, as do I.  I get emails from a cooking blog called "Fit Foodie Finds". I get a lot of healthy eating ideas from this blog.  When we had this meal, we doubled the recipe.  My husband enjoyed his chicken and veggies on warmed flour tortillas with seasoned black beans, sour cream, grated cheese, and a squeeze of fresh lime juice.   I just had the chicken and veggies with a squeeze of fresh lime juice. 

Today, I had some of the leftovers.  Earlier in the week, I had made some oven roasted sweet potatoes that I had seasoned with salt, pepper, and chipotle pepper.  I had the leftover chicken and veggies with the leftover sweet potatoes and they went really well together. 

I really did not make any big changes to this recipe.  We did add some fresh jalapeno to our kebab skewers along with the onion and bell peppers.

Grilled Chicken Fajita Kebabs

Ingredients

  • 16 oz. boneless skinless chicken breast, chopped into squares (3 medium breasts)
  • 3 large bell peppers, chopped into squares (any color)
  • 1 medium purple onion, chopped into squares
  • 1 tablespoon of olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 2 teaspoons paprika
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 1 lime, cut into wedges
  • fresh cilantro, chopped
  1. Preheat grill or oven to 400ºF.


  2. Prepare veggies by slicing into squares. Transfer into a gallon-sized bag and add a tablespoon of olive oil. Shake.
  3. Prepare chicken breast by slicing into squares (make sure they’re all around the same size) and transfer into another gallon-sized bag.
  4. In a small bowl, mix together all of the spices to create your rub.
  5. Add half of the spice mixture to the vegetables and the other half to the chicken. Shake well and let sit for 10 minutes (place chicken in the fridge).
  6. Place peppers, onion, and chicken onto skewers (alternating between the three). Repeat.
  7. Lay a piece of tin foil onto the grill and spray with cooking spray.
  8. Set kebabs on top of tin foil and grill for around 15 minutes rotating kebabs every five minutes.
  9. Remove from heat and squeeze on lime juice (THIS PART IS KEY) and sprinkle on fresh cilantro. Enjoy!
